1. Choose six or more vegetables, at least two being green vegetables.
2. Cut vegetables to a size which makes them easily to chew. The poorer your digestion, the smaller you should cut them. If you use root vegetables or vegetable stocks (such as the stocks on broccoli), slice these thin, grate or peel them thin adding them to your salad.
3. Protein addition: eggs, cheese, beef, pork, chicken, fish or tofu. Choose quality protein sources with little or no additives to include in your salad. Use a total of 4 ounces or more of protein foods.
4. Carbohydrate addition: corn, millet, rice or rye. Choose cooked or baked forms of carbohydrates and add 1-2 ounces to salad.
5. Salad dressing: organic salad dressing such as Newman’s or others or lemon and olive oil. Use only 1-2 tablespoons of dressing.
6. Mix 4-6 cups of vegetables with protein, carbohydrates and salad dressing.
